Kitchen Knife Edges: 40 or 30 degrees???

I was wondering if Spyderco's Santoku knives will hold up with a 30 degree edge using the Sharpmaker? Or am I better off sticking with a 40 degree edge?

Any opinions?

40 degrees is the best "one size fits all" angle for most steels. The Santoku is made from MBS-26. This steel will hold 30 dgrees with no problem. I keep all of my MBS-26 kitchen knives at 30 degrees.
