Recommendation? Kitchen Knife for Injured Hand

I'm trying to help a friend of mine track down a kitchen knife with a 90 degree handle. She needs ut for a patient with limited dexterity due to a severe injurt.

Ideally, it would look like a typical 8" chef knife, with a vertical handle, so that the wrist wouldn't need to bend to use it. It would be essential that there be some cutting edge directly underneath the hand, so that he could use his larger arm muscles to manipulate the knife.

There are a few off-the-shelf options, but here not quite right, and perhaps not as high performance as he'd like. Could anyone recommend a custom maker who'd like to take on the challenge?
 
I made a whole set for a guy in Mexico who had the same problem. Tell the guy to make up a drawing and send me a pic and I'll be glad to work up a quote. BTW, I also need a few details like steel choice and handle material.
