Kitchen Knife for My Mother+Starter Knife

Hello Everyone,

I am new to this form and new to the knife knowledge in general. First I am writing for a request for my mother. She has a lot of Cutco knives in her kitchen that are not being used. They are fixed blade and tend to be left alone most of the time. I am looking for a present for her for a knife that she can use everyday and the sharpness needs to be very good. Please let me know what your thoughts are in terms of the manufacture and the durability of the edge or sharpness. I am looking to spend anywhere from $75-$100. In addition I am also looking for a knife that will be used on a camping trip. The price range up to $50 and it has to hold the edge well. That is my main criteria for the knife. A "chef knife" is the typical one kitchen blade.
I like Victorinox kitchen knives.
They are hard to beat for the money.
Something along the lines of an 8"er is good for the home cook.
I prefer the 10" myself.

Also, a diamond or ceramic sharpening hone is a useful addition,
no knife stays sharp forever.
 
I'm confused... are we going camping or cooking?

I'll second the Vic chef's knives both as a good general purpose design and a good starter brand for the kitchen. The ones I've checked out are well-ground, comfortable, made of reasonably decent steel, and inexpensive enough you won't be too upset if it gets abused. I have this 8" model; I think I paid $25 for it. Add a matching paring knife and you don't really need anything else for general cooking.

Cutco knives (440A steel) are over-priced but have decent edge retention. I sharpened cutco knives every time I visit relatives(~every 3mos), so just sharpen (+ maybe a minor reprofile) them up for your mom. As for sharpner, unfortunately electric & v-pullthru will destroy most edge on knives. Learn how to sharpen...

As for camping knife - create another thread in 'general discussion', there are many experts will provide you with good insights & advices. Then make an informed-purchase, not group-thinking toward a particular knife.
 
Cutco knives are fine. Sharpen them up and she'll be good to go. I suggest a Spyderco sharpener.

For a camping knife I suggest one of the full size Swiss Army knives. They will do almost any task.
