Kitchen knife grinding tools tutorial?
Looking for a good tutorial for making kitchen knives...
Also which set up for flat grinding works the best for kitchen knives: Platen or Reversible disk?
 
Who is or who will be your customer? If it’s a pro chef or knowledgeable user collector, they don’t want a flat ground kitchen knife.

they want a flat to slight convex.

Target market will be for the family chef first with the pro's being the end goal

2nd ekim knives. Best chefs knife grinding tutorial I've seen. I like to flat grind against a platen till I'm about .010 bte thickness. Then slack belt to 0.002 at the edge. The slack belt helps keep things cooler and gives a bit of convex for food release.
