Kitchen knife makers?

Hey guys,

This is a kinda weird request, but if you were going to buy a kitchen knife, say a petty or some such in the 6-8" range for maybe 3-500$ who would you buy from?

No I'm not going to make it my self, a buddy of mine is buying for his wife and wants a good knife, and quite frankly I'm not up to the job.

I make decent stuff, but I'm not fast, at all. I'm lucky if I make a knife a year at this point...
 
my mini chef is a good seller and in budget under really but the blade is 5.5 inch long. my line knife is 8.5 inch and is kind of half slicer half chef and prep cooks love them cause they are fast and light cause they are duel hollow ground with a 4' platen.
 
The real question is who you would buy a stranger a gift knife from, or recommend to a stranger. Stranger being anyone whose precise knife preferences you do not know.

I would not look at anything that wasn’t stainless steel. Carbon steel in the kitchen is for people who know how to look after it and are willing to do so, probably not the case for a buddy’s wife.

I visited the shop while on holiday in 2016 and was impressed by the knives they were selling. Not the super cool Ferrari of kitchen knives, but a very nice knife as a safe bet for anyone.

And of course looking through at who makes stainless stuff in the right size and style.

Oh I'm not buying a knife for anyone... I'm looking for recommended vendors from people I know (you guys), at least in passing.

My buddy is going to do the shopping and the buying, I'm just finding trustworthy sources. Buying a nice knife, that's actually nice, is a difficult task for most people

Most people think that a set of knives from Wustof that they got at Costco is nice. I want to change their minds, ya know?
 
Bradford now has a couple kitchen knives in ARBL. I handled them at Blade Texas earlier, slim handles and very very light weight.
 
I have a few Robert Erickson knives, including a very nice kitchen knife.

If they like his style I can say Robert is a pleasure to work with to get exactly what you want. They can check out his website and he has a gallery with some of his work displayed. The knife above is in AEB-L and gets used often.

At 10" it's probably a bit bigger than OP is looking for, but I also have a 7" asymmetrical grind gyuto posted in there. I'm also accepting customs and would be happy to make a petty.
 
I'll second Steve Callari I love my nakiri. You'll probably have hell actually getting your hands on one though. I shoulda pulled the trigger and grabbed another one at blade.
 
Try the BF guys, like Deer Rock Knives, Robert, or Paul (CPE_Knives). Troopah knives, Blank Blades, MSicard, Bidinger are all other options (I don't know which of those may be participants here). MSicard is probably the one in the latter group most likely to fit the stated price range.
