Kitchen Knife Set

My wife might be convinced to get me a good set of Kitchen Knives for Christmas. My first choice would be a set by George Tichbourne but I am a realist and know that just isn't going to happen.

Any suggestions? I would especially like to hear from the professional/amateur Chefs out there.

I was looking for quite some time at getting the wife a nice set of Henckels that she had been lusting over.

With all the info I gathered here the Spyderco Pro Culinaire line is a higher quality and uses better steel than the Henckels. (Do a search for Pro Culinare)

His web site is http://www.chaicutlery.com/ and without a doubt he answered al my questions and put togeather a real nice kitchen knife set for the wife. (Spyderco does not have a kitchen set as such, just a bunch of kitchen knives) They are now wraped up sitting under the tree wating for her. Only time will tell how she likes the knives, but I realy like them!!!!

IMHO the German steel is to difficult to deal with. Very hard steel; a bear to sharpen and not very responsive to a steel.

The custom kitchen knives, considering the *actual* use you will get out of them and how long you will use them, are not expensive.

Pocket knives are wonderful, but kitchen knives are good friends...

And when you purchase nice knives, buy a steel. Smooth. Use often; only 2 strokes each side. You'll be amazed!

They're not very glamorous, but I really like my set of Henckels (sp?). They are probably the easiest knives to sharpen that I own and hold an edge reasonably well when steeled regularly. When properly sharpened and steeled, the thin slicer will shave wafer thin slices from tomatoes effortlessly. These are the older models with the full tang pinned handles; I'm not sure if the new ones with hidden tangs are any different.

Does anybody know a custom knifemaker that is making kitchen knives with carbon steel?
I have a couple of carbon chef knives i bought 20 years ago from a restaurant supply store that are my favorites and i'd like to chuck some stainless and add others.

Hey Stjames,

Have you checked out the discontinued models listed on the Spyderco website? There are three blade lengths: 4-5/8", 10.5", and 11.75" (yes, they're that big!). The micarta handle models come with AUS-10 blades, the wooden handle models have MBS-26. Both are 57-58 RC, I believe.

Their sale prices are over 60% off. Once they're gone, they're gone. I just ordered the middle-sized micarta model for $60.95 (msrp $147.95!). Call the factory at (800) 828-1925. They're open today (Saturday).
