Kitchen knife set

Hey guys,

I am new to this forum and need some information on which are the best kitchen knifes i know i can go get USA kitchen knives for sale anywhere but i want the real deal, I Need a meat cleaver that will slice through bone like butter haha basically i have fitted a new kitchen and would like to kit it out with the best quality kitchen knives available maybe some websites to get a delivery would be a bonus!

I have been looking into Nora kitchen knifes and the products are amazing but sell out really quickly and don't get back in stock for a while but the design in one of a kind, hand made to perfection they would look very stylish in my home and maybe even make me look like a legit chef until you taste my cooking :p

Since there are no single Best Knives! What is your budget? are you willing to pay 500.00 plus for one Chef's knife
or do you want a whole set for 200.00

Dexter Russell has good SS Cleavers in the 60 to 80 $ Range

For home use on a budget , Victorionox's line with the rosewood handles are hard to beat.

for a bit more $ Messermeister's Meridian Elite series are great knives

dont laugh too hard, but get a set of Old Hickory knives and a reworked Foster Bros. cleaver. are you going to cook or display knives? Old Hickory will sharpen razor sharp and perform any kitchen task. or better yet, get the old hickory then take your time and find some knives made by independent makers. this forum has a long list of makers who would make you a knife or have one on hand. keep the old hickory close by for friends and in-laws to use if they want to borrow a knife or help cook.

Knives custom made to specifications you develop after refining your eye for detail are the best knives. I think that's the only correct answer to the question of "what is best in knife." (typo intentional - referencing Conan the Barbarian)

My ginsan steel was forged by Sougo Yamatsuka in Sakai, Osaka.
 
I and others still enjoy using my True-Forged pre-1969 knife that I saved, am refurbishing. It was covered in a 1/4 of dust/dirt and red with rust. But not anymore. I have to sand the handle and re-stain it next..... It did work for a week straight carving brisket and steaks for 2 weeks and there isn't even a nick in it when I got it back; and is still razor sharp :)

But I think I fell in love with this knife...
