In order to design good and useful knives it helps to have a good understanding of how the knives will be used. My wife recently took a "Basic Knife Skills" class in which they taught the methods espoused by Cooks Illustrated in 1996. They passed out handouts that I thought the kitchen knife makers might find interesting... especially if they don't spend much time in the kitchen themselves. These are large images, so I intentionally didn't allow them to display in this window.
