Kitchen knife steel questions

Are there any makers who make chef's knives 6-7 inches in:

440
or better steel. All I need is one knife.
 
Shun and Kasumi both make laminated damascus/VG-10 blades....Of course you could also go with a laminated damascus/Cowry X blade from Hattori for anything between $700-$1000 :D
 
Check out the Forchesner made by Victornox. They use stainless steel. Also Henckels makes stainless kitchen cutlery. They are a bit pricy. My vote is for the Forchesner.

There are LOTS of makers of stainless steel kitchen knives. The question was does any one make kitchen knives of 440 or better stainless steel.
 
440 series alloys are a pretty low standard to shoot for. They are abrasion resistant, but don't get as sharp as most high quality kitchen knives. If you want a steel that is hard and abrasion resistant (and takes a really sharp edge) look at knives manufactured in Japan. The Spyderco kitchen knives fit the bill, but have funny looking handles. The Fallkniven knives are good. You can also look at the MAC line. I would particularly look at their Professional line.

Sorry for the misinterpetation. I'm sure if you ask some of the makers who frequent the forum, you may find someone to make one for you.
