Two good knife manufacturers of kitchen knives are Spyderco and Victorinox. There knives are not the most popular but they are great cutters. Believe it or not K-mart has a decent line of kitchen knives. They are the forged, full tang Martha Stewart brand and can be purchased for under $10 each. I bought some for camp and was surprised at what good quality they are.

Hattoris are pretty expensive, but worth it with Cowry X steel. Kershaw Shuns are very nice. Dexter Russel is used professionally a lot as is Henckles and Wustof. What do you mean by coated?
