Kitchen knives

Sal,
I have been doing some research on the Spyderco line of knives for the kitchen and
I want to see if you could give me a rundown
on all of the kitchen knives and variations
that has been made by Spyderco. Could you also tell me if the experimental kitchen knives that came out a couple of years ago are still available?

If you want to see pictures and descriptions, Jim Mattis has most of them for sale here (and clicking on the little pictures gets you nice big pictures). He lines groups of them up together on his magical scanner, so you get a nice comparison of the sizes of the various knives.
