I am not as into kitchen knives as I should be! But I want to find a good one for my parents for Christmas.

Any recommendations?
What's your favourite, easy to get kitchen knife worth $100 or under? (Or am I kidding myself and to spend more to really see any performance?)

I'd spend a little more, $150+.
I've been a sushi chef 25+ years, and have tried all sort of knives.
Great blade steel and geometry is never cheap.

I'd look into yoshihiro knives with western handle (if you're not into japanese handles), they make em both.

I'm assuming you want the classic chef blade, which are usually 6.5", but as a chef, i prefer 8 to 11" blades with japanese octagonal handle.

Funny how knife hobbyists will spend thousands on pocket/fixed knives, and then can't drop $100 on a kitchen knife that will be used more.
