kitchen knives

Shopping for kitchen knives as a wedding gift for a buddy of mine and wondering whether anyone had any suggestions. In my own kitchen I have Henckels, a Kai Shun, Globals and even a stamped Chicago Cutlery that I get some good use out of. Was looking for something off the beaten Henckel/Wusthoff path. Maybe with wood handles. Definitely forged. Considering the Sabatier Provence line or the Mundial Olivier line. I'd be interested in any opinions on different brands or info on the different kinds of blade steel used in kitchen knives. I'm personally jonesing for a Furi santoku. Also some of the custom kitchen stuff out there looks amazing. If anyone can point me to a kitchen blade discussion board where this question might be more appropriate, I'd appreciate it too. Thanks in advance.
 
I don't know about their availability in US but the F-Dick range of forged knives are TOPS.
 
I am NO expert, but I purchased an assortment of the Spyderco kitchen knives & they have worked flawlessly.

I also purchased the Benchmade 3 piece Prestigedges Kitchen Cutlery Set & not only is it very beautiful, it also does the job. It comes in a leather like case. The handles on them are sweeeeet! You can get a set on E-Bay for $250.00 buy-it-now or the guys reserve price was $240.00. Check it out......you might like it.
 
I have been very happy so far with two Chroma 310 knives designed by
F.A. Porsche.

In addition to Henckels and Global, we (my store) sell Mundial and Icel forged knives, both of which are pretty good for the price.
