Kitchen knives

I've never before taken much interest in kitchen knives. Now that I'm single, and FREE:thumbup:, I've decided that the bent up , serrated, broken tipped knives the ex left me with, that it was time to pickup a few good kitchen knives.

I have picked up two Cold Steel Finn Wolf knives. These have about a 4" blade. These cost me a total of $24.00 and so far have been excellent! The blades are a little thicker than some kitchen knives, at 2.5 mm, but they are extremely sharp and have proved themselves in cutting up chicken and beef. I also picked up a Roach Belly which has a little shorter blade and it has also been useful in my kitchen. I'm just glad to have some knives that actually cut instead of having to saw back and forth with the others.

Just curious if anyone else has picked up these really inexpensive knives from CS to use in the kitchen.
 
If you want quality, and you're willing to spend a bit of cash, look into Japanese laminates. They're expensive, but IMHO, well worth it.
 
I dunno about those.

My wife went to the mall and picked up two Caliphon santakou knives for cheap on a store liquidation - forget the name of the store but it is a national chain going out of business. I got two nice carbon steel 7" slicers at a garage sale for 5 cents each, one had a walnut handle.

For good carbon steel knives at a decent price the kitchen knives from Warthers are hard to beat. A good basic set will run well under $100.00. I have several of their paring knives and have been very happy with them.
