Kitchen knives

Are there any kitchen knives(from parers to chef's knives) being made out of 8Cr13MoV? I'm looking for for some inexpensive knives that will hold an edge to replace the crap currently in my knife block.
 
I have been buying Japanese kitchen knives at the flea markets. Some are brand names like Tedron Sword or MAC. Most have wooden handles. Most are marked Molybdenum Vanadium Steel Japan. Some say Taiwan but the steel is Japanese. Most have a sort of Wharncliff style point. These knives have thin full flat ground blades. They don't look like much, but they really hold an edge. The Germans have caught on, and they are starting to add Vanadium to their knives. The Vanadium Carbide inclusions in the blades have a RWC hardness of 82. The blades have RWC hardness of around 60. The wear resistance goes up when V is added.
 
My parents have a set of knives like that they picked up at a garage sale. They say "Molybdenum Steel" on them and are marked Japan, and they cut great. But I'm looking for something I can find a little more conveniently online if at all possible.
 
I'm sorry I can't help you, but a chef's knife made of 8Cr13MoV seems like a great kitchen tool to me. Let me know if you find them.
 
Kinda not in 8cr13mov but Shun makes a great chefs knife. I found one made of VG-10 for $70.
