I am going to be looking for a new set of knives for the Kitchen to replace our old set. Any recomendatins would be nice, what brand you would think is good for the money, what brands to stay away from. Best way to sharpen them up and best way to make them last. Any help would be nice, not looking to spend a ton but would be investing no more than $250 for a set, Thanks.

If I were you I would buy the best chef knife I could afford (Shun makes nice ones) 8" or 10" and a good paring knife. You can add to your "set" as you go but with those two knives you can do everything you want in the kitchen. Even at that I rarely use a paring knife.

JDieseljoe69, get a magblock http://benchcrafted.com/magbloks.htm then start replacing your old set 1 knife at a time. $250 will get you about 3 good quality mass produced blades or maybe 2 hand made ones from the makers section. Go find a Williams & Sonoma or a Sur-la-table take the wife (so they fit her hands) and check for balance. I'd cook happily the rest of my life with a good 8" Santuko and a 6" boning/fillet knife. A Yangiba and a Carbon Steel cleaver would be icing on the cake but we're knife nutz here its what we do:D
And most of us use our kitchen knives more than any of our others so why skimp there?
