Has anyone built kitchen knives from blanks like the ones Jantz sells? The 8a blanks. If so, how do they hold up? Are they any good? I know they aren't going to make $300 knives. Just everyday users for non-pro cooks.

Thanks
Mike

I built one for my wife several years ago when I was just starting out. I have to say the blank was pretty nice but can't say the same for edge retention, If sharpening a knife often doesn't bother you, then you will probably be happy with it. If I remember the blank was somewhere between 20-30 bucks. Not sure what I expected for that kind of money but I probably got exactly what I SHOULD have expected:D

I modded a knife made by Ontario Knife Company. I basically removed the handle, reprofiled the blade more to my liking and put a maple handle on it. It is part of their "work and field" knifes. This one was 1095 carbon steel and cost ~$13.

Haven't had problems with rust as long as I wash and dry it (takes less than 1/2 a minute) after using it. So far its been a good kitchen knife.

I made a carving/slicing knife and fork for my fiance's dad as a Christmas present this past year. The blank set was from Texas Knife and the blade had cryo treatment which helps with edge retention.

This is the set I made, along with the cutting board I also made:
