I've got the basic kitchen shears from whatever brand walmart or target sells in their wooden blocks, I'm less than impressed with their design.

I recently learned how to sharpen them and had success in making them suck less.

Are there premium kitchen shears that will make me foam at the mouth for them or should I be happy with the ones I have that I can keep sharper than factory?

$55 dollar kitchen shears sounds like a pretty fair price, do yo mind if I ask how long you've had them and how they handle cutting a whole fowl?

Heritage Cutlery VP41 high leverage shears.

USA made and super sharp. Designed originally for the poultry industry.

42, could I ask you the same question, especially now that there are two brands to choose from.

I use a $3 pair of EMT shears. They make their way through a chicken back like nobody's business. And yes, I did the whole "cut a penny in half with them" thing once upon a time, so I don't have a whole lot of worries about them chomping their way up a chicken spine.

What I'd really like to do is to go back to the Alton Brown video where he shows how to butcher a whole chicken into pieces as part of his fried chicken recipe and see how he does it with a knife.
