The theme for the BKS show in Gembloux is Japan, so these are about as close as I could get.
The sujihiki has a 280mm W2 blade and a koa and blond horn handle from Stefan Keller in Hawaii. The gyuto has a 270mm ladder pattern 1084.15N20 blade and a Keller handle of blond horn and thuya burl. The poplar sayas were made by Eamon Burke out in DFW.
