Can’t get a truly sharp edge on both sides of the knife. Using kme with diamond stones and going through apexing and all that. I gotta be doing something wrong. Any ideas? Almost seems like the stones are worn out, I clean the stones often.

Have you sharpened any knife to your satisfaction yet? If so what was it? And which knife are you now having a problem sharpening? Also, what stone grit are you starting with, and what angle have you chosen?
The KME manual has a straightforward recipe for sharpening knives, and Ron goes through the process on his YouTube, worth a few minutes.
We have been using the KME since mid-2015 and I've never cleaned or washed KME's diamond stones. They still work great, but we keep a wet sponge in a bowl to dab stones while sharpening; no, we do not wash dishes with that sponge :-)

Use a sharpie to mark the edge, make sure you're removing the sharpie mark and really hitting the apex of the edge which should form a burr that you can feel. Depending on the steel, some take more time to truly hit the apex.
Carbon steels will load up the diamond stones. I've cleaned the stones with soap/water and a scotch brite pad. Diamonds are not necessary on carbon steels. Make sure not to apply very much pressure using diamond stones on carbon steels.
