knife almost chosen.... i'm confused

Hi folks!

I camped and hunted almost for the last 10 years. I always used cheap knives. My current knives are an Mora compagnon HD an a ontario Rat1 folder. I realy appreciate the flat grind of the Rat1 for field dressing and food prep, but it lack the strenght of a fix blade.

Right now I what to invest in a good knife (because I want) for all around task (light battoning and camps chores), food prep, game dressing (field dress ducks/gooses, rabbits and deers) and little fish prep. I think I prefer full flat grind because my scandi grind on my Mora does'n like field game dressing very much..... (lots of chips ans rolls).

I do not want to invest in a afermarket sheat or anything else after purshasing the knife, so I'm looking for an whole package.
I prefer stainless because I live in Canada and it's very rainy and snowy

I tappered my choises to the followings:

Enzo Trapper flat gring in N690C (i realy like the leather sheath and the classic look)
Fallkniven F1 in vg-10 (I heard this is indestructible after you sharpened it to prevend chipping)
Esee 3 1095 (I know it's not stainless but many swear only by it)

All the knives are at the same price where I live.

What do you think ??

I really like the Enzo blades. I have a Enzo Birk 75 thumb stud linerlock and it is great. I use to craft puukko using Lauri PT blades and other Lauri blades. If I was able, I would craft my knives now with Enzo blades. The Trapper is a good design. I think you would be very pleased with it. I haven't found a good Finnish blade that I wasn't happy using.

Although I do not own any of those, i have read alot about those knives as well as watched countless videos, in addition to a whole variety of others knives.
Based on the above notion, if i were you, i would go with the Fallkniven F1 in VG-10 and call it a day. From my perspective, it is the best overall of the 3.

If you're open to other makers/suggestions, i could not recommend enough Survive! Knives which use 3V (semi-stainless) and stainless alternatives like 20cv or Cpm-154. But it will cost quite a bit more than the 3 above, but come with arguably higher performance and steel quality.

All in all, F1 gets my vote of the 3.
 
While I'm not generally a huge fan of their knives, i have to admit that if you're not giving serious consideration to the Cold Steel Master Hunter in 3v, you're overlooking whatbisblikely your best option here.

Tough, durable, and that 3v ought to handle everything your talking about without worries of chips and rolls.
 
I can say the F1 has performed well for me in all the chores you list. It is a compromise to use one knife for all those tasks, though. You may find it a little small for the batonning and a little big for dressing a small duck. But if you want just one tool, it's pretty great.
 
Are you comfortable sharpening convex edges ? If so I'd go with the f1 if not I'd keep looking

So many knives I want uggg

The GMF2 is a super comfortable knife, love the forward jumping on the spine. F&F on knife and sheath are outstanding.
TRC tr15 is another favorite fixed blade.
Have you seen the Esee 3HM?

i wouldn't let that turn you off 1095. i've only had one rust incident, and that was because i loaned my knife to my wife while we were camping. it rained a lot, and she put it away wet. it was my fault for not drying it myself, but she gets the stainless blades now.
 
I have used the esse and fallkniven, the esse handle is too small for me. I say fallkniven.
 
Esee or Fallkniven would be great choices...U can't beat Esee's warranty.
Both are easy to sharpen & probably the VG 10 Fallkniven is a little less maintenance.
I can't speak for Enzo.
 
I just got an F1 after years of holding off. Great blade. I've never been a fan of the ESEE knives.. the handles are either too block (6) or to small (3/4). I had a 4 and did not like it at all. Others love them. I'm in a wet climate (snow/rain/humidity) so I went with the F1 VG10. Brute of a small knife. The leather sheath is also very high quality on the F1.
 
I have an F1. I have not used it very much but it feels great in hand, my big hands, and is not that hard to sharpen. If you want an all weather, all conditions, multipurpose knife, I don't think you would be disappointed.

I would advise against getting on the Survive! order list. Its been 2 years and their production schedule hasn't made any headway in the past 4 months. If you decide to get one, just buy it on the secondary market. The rate things are going for them, I can have a kid, put them through K-12 and still won't have my pre-order in my hand.

As said above Cold Steel Master Hunter in 3V would be a better, more affordable and viable choice. Besides, that would be the only option in my humble opinion that could be acceptable for both batoning (because of the steel) and food preparation and alike (because of the geometry). And again, it is still cheaper than any of the options that you listed.
