Knife angle sharpening question

Hey ya'll! So quick question about knife angles when sharpening... So I am a complete newbie when it comes to sharpening blades. I have a Spyderco tri-angle sharpener and it has a 40° setting and a 30° setting. I am typically only sharpening outdoorsman knives, like lock blades, fixed blades and the odd pocket knife and multi-tool. I also have a field sharpener (a worksharp field sharpener) which sharpens at angles of 20° and 25°. Now my question is, what does going from say 30° to 25 or 20° do to a blade? What will the result be if I go back up from 20 or 25° to 30°? Is there any special technique I need to be aware when switching from angle to angle? Is it even a good idea to switch from angle to angle like that?

I am not an expert and I will defer to others for a more complete answer to your questions, but be aware that the 30 degree and 40 degree settings on the Sharpmaker refer to the TOTAL ANGLE of the V, which translates to 15 degrees from vertical center at the 30 degree setting and 20 degrees from vertical center at the 40 degree setting.

I'm not familiar with the Worksharp sharpener, but I know that some sharpeners use the degrees from vertical center (ie 20 degrees equals the Sharpmakers 40 degree setting), not the total angle of the complete V.

I think it is pretty safe to assume that by 20°/25° they are measuring at the vertical line of the edge. In which case, my question has been partially taken care of! Thank you for your input!
