Removal: Simichrome or Flitz polish. Available at ACE hardware and many knifemaking websites online.
Prevention: Use mineral oil on blades that will see kitchen duty, and Briwax on the rest (both handle and blade w/ Briwax).
Whatever you do, don't use WD-40. It will eat away many finishes and, and...(doesn't taste good either...

1st off I am not a shill for any stores but smoky mountain knife works has an item called a multipurpose eraser for 3 bucks that supposedly removes rust and stubborn spots from metal might give it a try not wasting a bunch of money to give it a try
