knife hardening

I have never made a knife before and want to try. However on the many Utubes they tell you to quench in oil and when that is cooled to harden it in an oven. I have also heard that you only need to quench in oil. which is right thanks Mike
 
Quench in oil to full hardness then temper to desired usable hardness. It's a two step process. You can find more info in the knife makers forums.
