Can you have a knife in your non-carry on luggage at the airport if you are under 18? If so, are there any limits on what type/blade length of knife you can have in there?

Yes a knife can be stored in checked luggage without any special declaration or storage case. Since checked luggage is not accessible during flight, they frankly don't care all that much what you put in checked, even guns (provided they are stored in a safe, locked manner), so long as it's not flammable, explosives, drugs or animals.
There are NO rules on the length of the blade nor your age other than those that normally apply per local law (state law or foreign laws). Generally when it is in a suitcase wrapped up, it is not considered "carried." The only time having a knife in checked luggage becomes an issue is when you pass through customs (if the flight is international) and the knife is of a type that is prohibited from being imported into that country.
