Knife in "The Hunted"

Hi,
The film "The Hunted" starring Tommy Lee Jones and Benicio Del Torro has just been shown again on satelite T.V. here in Britain. The film is a little lame and not a patch on other wilderness chase films but I was intrigued by the knife Del Torro's character makes and then wields in the film.
Does anyone know who made it and is it available commercially?
