I purchased this chef's knife a few years ago and hadn’t used it much until recently. I cut up some food and had mistakenly left it in the sink soaking in water.

When I took the knife out of the water, the knife edge was very rusty. I was able to brillo the rust off, but there was a black soot like stain on the knife edge. I have attached pics of the damage.

Can this be corrected/fixed?

That could be a little minor pitting on the edge. Give it a good sharpening and use it. That is probably a carbon steel blade so be careful about leaving it wet after use. Best thing to do after use it to clean the blade, wipe dry. You can then wipe it off with a piece of wax paper to help prevent further rusting.

That happened to one of my Chroma cooking knives a while back. I had to use some Flitz metal polish and my Dremel to get all the staining off the blade. Use the Dremel on medium to low speed....moving it frequently. Don't stay in one spot too long.

you should be fine to resharpen it and start using it again.

i second the advise above about cleaning it and drying it and putting it away promptly. all it takes is a couple wipes with a damp sponge to clean it, wipe it off with a dish cloth and stick it back in the block. takes a couple seconds and will keep the blade from rusting.

There are a few things you could do.

Take it to a knife shop and have the edge sharpened and then buffed.

Hit the edge with a little steel wool.

Just sharpen it normally and keep it oiled with mineral oil after each washing.

Flitz - GOOD. Dremel - BAD. A Dremel tool can help you screw things up twice as fast as by hand. ;)

When I read "Dremel", I wanted to take my forged sashimi knife out of its sheath and cut my belly open...

Please! No Dremels on knives!

I've used a Mr Clean Eraser Pad to wipe rust of some of my cheaper carbon steel blades I've left in the sink.
