Knife Maintanence question

I have a friend who's a chef and he's very protective of his knifes,but he has an idea I think is all wet,,,He says that you should never wash a knife in hot water because it will lose it's temper,I don't think hot tap water could possible be hot enough to affect a blades temper.What do you guys think? By the way,there's a good cigar at stake here.

Unless the water is like Really Really Hot,, it's not going to be a problem....

I'm not sure sure I would want to eat your buddies cooking.. I hope he at least used some bleach in his luke warm water..

Rebos - Almost all tempering takes place at temperatures in excess of 300 degrees F. Most water heaters, even when set at their highest temperature range, will not reach 160 degrees F. Industrial dishwashers may go up near the boiling point of water, 212 degrees F., which is still far too low to have any effect on steel. The bottom line: grab your cutter and matches.

I always heard that when you wash something metal, its a good practice to "scald" it, or in other words, use water hot enough that whatever water is left on the metal after you dry it, will evaporate very quickly. Cuts down on rust.

To temper a blade, it takes a while, sometimes 2 to 4 hours. Now even IF it did have an effect, how long does this cook wash his knives???

Or hey, here's a twist. Remember the SR-71 Blackbird spy plane that the Air Force used a few years ago? Every time it flew, it flew SO FAST that it got SO HOT that by design, it stress relieved (heat treated and tempered) the metal it was made of everytime it flew!

What a concept! So you can tell your cook that its actually a GOOD thing for the steel to wash it in hot water! It "stress relieves" it everytime you wash it. (Yeah, and about that swamp land......)

So, How do like your cigars? Do you prefer a maduro or natural wrapper?

Thanks for replies,now I get to choose any cigar from his humidor,,,I think I'll pick,,A Padron Anniversario Vintage 1964 (maduro of course).And I'll have to remind him the whole time I'm smoking it what a fine smoke it is.
