Many probably already know of these sites, but some may not. Lots of information from attaching handles to hardening/tempering or polishing. Likely worth a look if ones thinking of working on a knife.

(note: I've seen mention that some of the heat-treament temps on the Engnath site may not be optimal--probably worth getting several opinions on stuff like that.)
 
If you're planning to try knife making you can't do better than buying "The complete bladesmith" by Jim Hrisoulas. In my opinion anyway!
 
Or, grab a puukko kit from Gary Harjus. Lots of fun and doesn't break the bank.
