I AM TRYING TO FIND OUT WHICH METAL WOULD BE BEST FOR MY INVENTION. MY INVENTION IS A MEAT CUTTING CONTRAPTION THAT WILL BE RUN BY MANUAL FORCE.

Welcome to Blade Forums!!!! You might want to post any further questions on this subject in the Shop Talk area.
I work full time for a company that makes HUGE food processing equipment. My division specializes in citrus processing machinery.
All of the equipment is made from stainless steel and features very clean, smooth welds and highly polished surfaces. Most of the components that cut or are in a high wear area are made of stellite investment castings. Most industrial meat processing equipment is also made in the same fashion.
I would recommend using any of the "stainless" blade steels like ATS-34 for your machine, at least for a prototype.
