Can this be done. I'm talking about taking the blade and attaching handles. or somthing like that. This would be for choping/brush, not a utility knife.

This has been beat to death before.Short answer - Mower blades are not the right steel for knives.

Ask Wayne what he makes his blades from now.I'll bet it isn't lawn mower blades. Many things HAVE,CAN,AND WILL be done. Most of us have a scar or two, and a reject bucket to prove that theory.
Most lawn mower blades are a fairly low carbon steel (cheap ones are nearly no-carbon steel). They are designed to survive wear and impact, and be soft enough to bend before breaking -not cut with a sharp edge.A throwing knife is exactly that use,a working knife isn't.

PS Years ago the blades were made from carbon steel,OSHA and other legal things have made those old breakable blades a relic. When Wayne started making knives, yes,a lawnmower blade would work.I would think the spiral blades from an old push type reel mower would make fine knives.
