good afternoon, ive been on the look for new knife patterns/templates, specifically, a good santoku, Im curious if anyone could direct me to a website to buy them. I found one, Tharwa Valley Forge but not sure if their patterns are good or not. Any help is greatly appreciated.
 
Tharwa forge are fine, they're an established mob. Go with that if you like it

I would recommend drawing a bunch of santoku profiles based on various photos and choosing one of those you like. These aren't a machine thread, so there's no need to perfectly replicate a spec
 
Look up images of the knife style you want online in a search. You will find hundreds of ideas.I often print out te image and manipulate the size to be a 100% copy, whiuch I use for cutting out the blank.

A good source for basic shapes and info on Japanese knives is Z-knifes.

Z-knives has a lot of useful info, especially their interactive comparison graph site for steel alloys.

I regularly use an internet search for ideas and shapes. If I want a gyuto, I search "gyuto images". You may see shapes and handle ideas you had not thought of. On many knives, there is a great variety of shapes that all have the same designation. This is especially true of Japanese knives and other ethnic knives like puukko.
