Knife Sharpening is a Dying Trade

Really. There was an article in the paper about this guy in Rome and how hard it was to make a living and how no young people wanted to do it.

I can sharpen knives pretty good, but I'd hate to pay my bills on it.
 
Jig-type sharpening fixtures slow things down quite a bit.
 
Your right Bill and the gadgets get knives no sharper than free hand w/stones.

I also find this to be true, I have never been able to get a knife as sharp with a jig as I can free hand.
 
The happenings in the mans life in Rome, Italty is certainly indicative of where our American craftsman/tradesman is going.DM
