knife sharpening systems?

I have ordered an Edge Pro it will hopefully be here on Friday. I am intrested in trying other methods and systems. I think eventuality I will purchase a wicked edge also. I've a. Free hand haha forget it I get a better edge with a cheap smith's clamp on system. l have ways loved knives and just recently I've gotten serious about sharpening them. The reason I went with the pro is I am planning on setting up a little knife sharpening shop in my garage as a side hobby business. I'm not planning on making tons of money I know its not going to happen. I figgure maybe I can make a little to fund my hobby. With that said I'd also like to try out these paper wheels and a belt sander. How do you keep a constant angle when using these sharpening methods? I figgure the edge pro has a shorter learning curve.
 
If you are going into business, paper wheels will give you the fastest and best return. Other systems work well, but nothing can compare with the speed of the paper wheels. Time = Money.
 
I will check out paper wheels. I’m assuming all I need is a low speed grinder and put on paper wheels and go to town. How do you control the angle? Or is that something that you just learn to do?

You will develop your own technique. Richard holds the blade flat at 1 o'clock so he can watch the wire edge develop. I hold the blade flat at 11 o'clock (wheel turning opposite direction - always away from the edge). You can use a Sharpie to mark the edge for starters to see if you're holding in the right place.

Richard likes the slow speed as do I. Mike the Razor Sharp owner likes high speed. Again, you'll find your own way, but the curve is not long.
 
I don't know about most people, but if I pay for a sharpening job it would be mostly for a regrind/ cosmetic edge. I haven't seen anyone post pictures of how flat and good looking a paper wheel edge is. I see constant pictures of wep and edge pro edges and how even and flat they are. Maybe a jigged paper wheel setup would result in fast good looking results, a jig would be very possible for paper wheels.
