Knife Sharpening video

He said you should never sharpen your blade yourself and professional chefs always send them out? :confused: I think if you're a professional chef you should know how to sharpen your blades! :mad:
 
I know that one guy is a butcher and all.... But thats not how i sharpen a knife at all, especially on a whetstone. His technique just seems strange, but the knife zips through that meat like butter. He must be doing somethin right *shrug*

I scoffed at Alton Brown when he said to never sharpen your knives yourself. Like it's rocket science, or some kind of crazy impossible task...:jerkit:

By the way....From watching Good Eats, i gather that Alton Brown is a fellow knife knut. I've seen him carry some quality steel. His kitchen cutlery (damascus?) is top notch too.
 
he probly said not to sharpen your own knife cause most people would just hurt them selves.
 
Yeah....i understand that probably 99% of people are not knife knuts like everyone here. Alton was speaking to all the sheeple probably, and us experienced makers/tinkerers got left out.
 
The knives being used in the sharpening and butchering vid's if you will notice were meat knives or bonning knives save for the small jack knife he used to start the process when the deer was hanging. The bonning knives are very thin bladed flexable knives so I can see why he was sharpening them the way he was. It is the way I sharpen my wives old Chicago cutlery bonning knives. I also use the steel the way he does too. Kind of informative in nature but nothing really new to me and the way I'll dress/skin and process deer. keepem sharp
