Knife sharpening

Mods, If there is a specific forum or thread on this (I suspect there is), please direct me there and close the thread

I sharpen my own knives and get a pretty decent edge on all of them. However, my wife has a large kitchen knife, 8" long and 3" wide down to a taper. It is a fairly expensive piece of cutlery and used to have a serious, serious edge on it. I've tried a variety of ways to sharpen it, including a well-touted Amazon sharpening tool. Nada. I tried sharpening it on a stone as I have done with my folders. It's just too long to get a consistent edge. Thoughts?
 
What stones are you using?

Do you know the knife brand?
