Hi I am new on this thread and I am sure this question was answered somewhere but I cannot seem to find it.
I am planning on learning how to sharpen my own kitchen knives and maybe even start sharpening knives for other people.
What is the best way to sharpen knives at high volumes? I currently have 4 dmt benchstones of varying grits but I was wondering
if using a machine to sharpen knives was a good option. I heard that it takes too much off of the knife and the tempering
will go bad because it gets too hot... But then other people were saying it is the best way to sharpen knives...

Basically my main questions are:

1)What is the best way to sharpen knives
2)Are machines a good way to sharpen knives and if so, what kind of machines are best?

G'day and welcome to the forums! You will find an absolute wealth of information on sharpening if you look for it. Check out the "Maintenance, Tinkering and Embellishment" subforum. As for the best way to sharpen...that's really up to you. There are countless techniques, products and machines for sharpening, from a few grits of wet/dry sandpaper to the latest and greatest guided and/or powered systems. They can all ruin your knives if you do it wrong.

One word of advice though; don't even consider sharpening for other people (especially if you want to charge for it) until you are very confident.

Have a look around, use the search function and enjoy the forums :)

I use a spyderco sharpmaker and love it. I use it on both serrated and non serrated knives. I have sharpened about 30 different kitchen knives as well as around 20 pocket knives and it performs great. It will not give your knife a mirror polish but it is very user friendly and even includes an instructional dvd that is helpful. I purchased mine for around $50.

I just picked a Work Sharp Knife and Tool Sharpener and so far I love it. Knife collector for a LONG time but just starting to do sharpening.
For volume, this might suit you since sharpening is quick!
