In Las Vegas try Bonds House of Cutlery, 3540 S. Sahara Ave, 702-870-2347. Unbelievable selection of knives including limiteds and hard to find. Careful, you'll drop more money there than on the slots.
 
I'm not from AZ or NV , but I buy a lot of knives from these guys online.
I don't know how much they stock at their retail store , but you can call and ask.
