i would say to check out Mors Kochanski's "Bushcraft" book... he explains various knife techniques, for different uses.... he also goes into proper axe and saw usage...
Youtube is also a great source as well... there are a ton of Bushcraft/survival video's on there...

Reuben explained a few different techniques in this thread, it's got some great pics too: http://www.bladeforums.com/forums/showthread.php?t=542939&highlight=bushcraft

Mike,

I was not as impressed with Kochanski's book on Knife usage as I was on his primer on Axe usage. He talked a LOT about how to use an Axe, but seemed only to cover how to be safe with a knife - not the holds to use.

Ray Mears Bushcraft book has some very good information on how to use a knife for bushcraft.
