Knife use and maintenance in a commercial production setting??????

A recent thread alluded to the crude sharpening that is done in many commercial settings. Any stories/pictures from canneries, fishing boats, etc., about the types of knives used and the maintenance of those knives. A friend returned from an Alaskan cannery and said you drop the knife in a bucket when it gets dull, someone picks it up, it is sharpened on a grinder and gets returned to the workers.
