"I heard you put a convex edge on every knife"
Well....that depends.
Technically, no, I do not put a convex edge on every knife.
I do think it's the strongest edge and will last the longest. But I have found, with time and many orders, that most customers prefer a 30-40 degree standard microbevel....and given the machines I have access to now...that is what I am doing.
I absolutely will gladly put a convex edge on any knife...but do so only on request now. Like I said, it is my preference for a tough, push-cutting knife. Many others, both individual knifemakers and production companies do convex edges...some wide bevels and some micro-bevels.
Now....that said:
Since the last step in my sharpening process is stropping (power-stropping) - every knife I have has the slightest bit of convex to it anyway....but I can't help that....just comes out that way. ANY knife stropped (whether by hand or power-stropped) has at least a very slight convex microbevel on it. (if I need to do some diagrams, I will

So....either way....rest assured, you are getting the best edge I can put on a knife at this time. :thumbup:
