I just read some interesting info on Kudzu. In Japan the root was dug up during times of famine and eaten. This is excellent info because down here there are tons of kudzu roots for the taking. also alot of people simply don't know this info.
one problem is the root is larger than a human so it is labor intensive.
The vines can be used to make cordage that is reportedly stronger than hemp and sisal.
The young leaves are also edible in a multitude of dishes.
There is also a medicinal value to the root. It is good for flus.
