hi, i was wondering what exactly the purpose of laminated steel, such as the fallkniven knives. how thick is the laminated part over the vg-10?

Laminating steel has been done for a long time .The Vikings 1000 years ago did it. Primarely it's used to save money but it also gives a tougher blade in bending [Fallkniven website gives details for their knives ].

Much if the idea is to be able to use an edge steel that is somehow less suited for an entire blade.

With swords and choppers, you can use an edge steel that would be too brittle on its own. With smaller knives, you can laminate a high-carbon tool steel between stainless sides. With some powder steels, I believe you can stamp out the knife blanks rather than laser cut them, and so save quite a bit on costs.

And yeah, us Scandinavians have been doing it for over a thousand years. :)
