I have the Lansky sharpening system with all the standard hones. I am thinking about getting the diamond hones but do I really need all of them or is there one or two that I could get to add to the system? The next question is if I can get by with one or two when would I use the diamond hone(s), after I have used all the other hones from coarse to extra fine?

If you only sharpen, you're OK. If you need to reprofile edges, you'll want the diamond stones. I use the diamonds all of the time
 
The fine ceramics are better than diamond for the final polish. Get a coarse and medium or fine diamond then finish with the fine ceramic stones and you should get nice results.
 
No problem. If you're having trouble getting a scary sharp edge, try finishing with a strop. You can make one by glueing an old belt to a 2x4. It's the best method I've found so far for removing the last vestiges of a burr. I use an Edge-Pro and even with the 3000 grit tape I could see a tiny (really, really tiny, but still there) little burr under my loupe. I can see an appreciable difference between a knife that I've finished off with a strop and one that has been finished with the tape. The stropped blade passed the TP test and the other didn't.
