Well, I have the 7 1/2" and the 5" Chefs knives done. Handles are canvas micarta left Grippy and ready for dinner tonight :)

Just needs logos and staining from use. These are thin and SHARP:thumbup:
The handles on these are from thinner material that really gives these a wife friendly feel and a more elegant size to me. I like the way these 2 feel :)

Steel is 0-1 etched.

I can honestly say that these 2 knives worked better than any knife I have ever had in the kitchen since I was a child!

The handle comfort and balance is GREAT. After 1 second of use you totally forget that your holding a man made tool and simply do the work. For me that says EVERYTHING about comfort. Not noticing th ecomfort means it IS comfortable.

I also thought I'd dislike how the 5" version was as fas as the size. It was the opposite. These 2 and the small paring knife I have ready to grind on should make an awsome 3 piece set but I am making a 6 piece.

These 2, 2 pairing, 1 small spreader and a longer pointy 6"ish utility. THose last 4 will have to come after some orders are filled.

I am very pleased with the performance after tonight and there still hair popping sharp.
