Large stainless working knife

Maybe the SW HRT combat ? 440c steel don't know about it much
Something from Busse or Tops if you want to spend more.

The BK+T knives seem to be pretty tough and with little upkeep, corrosion shouldn't too much of an issue.
 
How about the Fallkniven A-1 or A-2?

VG-10 steel, bombproof, and afforadable- just the next pricepoint up from your BK-7.
 
The thing I like most about the BK & T is the handle shape. I like a smooth handle for heavy work, especially a handle that is shaped to maintain hand position without a tight grip. The blade looks heavy enough to be a good chopper, but thin enough to slice with. If any of you own one, are my impressions right?

The thing with stainless is not so much corrosion, but slicing food. I really hate the taste of an apple cut with a carbon blade. I can't imagine it would do fresh meat any favors either.

Th S & W knife looks nice. I'm a little hesitant about the recurved blade, though. Are they hard to sharpen?
