Las Vegas travel advice, esp. beer content

I will be going to Las Vegas in mid March for a research conference. It is work-related, so I will be on good behavior. I love people-watching, not so into gambling just because I have better ways to spend my money. I would love to find a good bar to sit at and watch people and enjoy some good cocktails or esp. some unusual beers. Anything like that in the central strip area? I'll be at the Tuscany something or other that is just north of the airport. Any advice of things to do would be much appreciated. I'll have a fair amount of free time (1-2 nights and a full day on Thursday). Thanks in advance!

You can go to the Hooters Casino, sit at the bar in front of a video poker machine, occasionally touch the screen and get free beers all night...
