Yeah, recently I've noticed that my G10 Leek has developed a rattle when it's open (But not when it's closed). Anyone know what might cause it and how I might fix it?

It is probably because of the liner lock. It is probably made of 410. You might try to tighten the center pin with a torx bit to stop the rattle. What you have there will most likely be a fancy letter opener some day.

The spring inside is what's rattling. You can disassemble it and pack in some semi-solid lubricant into the cavity for the spring.

What would you use?

Either Vaseline or Moly-slip should do just fine. You want just enough that the spring will have some drag, but not a lot. You want the leek to fire easily, but the spring not to move under it's own inertia when open.

Just start with a little vaseline, and then if it's still rattling, add more, and check again.
