What should I do about left handed people, we all know the real solution is rounding them up on an Island that does not have access to internet knife shopping and be done with the lot of them.
But that's illegal so do we make knives for them in hope that yes someday a wild lefty will stumble in and say "that left handed single bevel yanagiba is exactly what I was looking for"
Or do you just make all of your knives for right handed people, (Oh yeah this is a thread about single bevel Japanese knives btw) Then and only then upon request for a custom order you make the cursed left handed tool of satan.
I'm thinkinig to just make all of my knives right handed, how do you guys tackle this in a realistic way in your shops?
 
I make them on order. Never found a need to do otherwise

I have made many chisel ground blades and have had only 2 requests for the left hand grind.
 
My wife is a lefty and I've offered to make her a left handed chisel grind kitchen knife to match mine. Her answer "Why, you do all the cooking"... She does have a point.
 
I'm with Adam on this. I have made maybe three left hand Japanese blades to order. For years I had a left land sashimi knife that no one ever bought. It was a brain fart that I started on the wrong side and decided to just finish it out as left handed. I had a fellow looking at my knives at a show and he commented that it was hard for lefties to get a good knife. I gave him the knife and said, "See, it isn't all that hard."

Now, honesty time here:
How many of us have made a nice sheath only to realize that it faces the wrong way and it is only useful for a left handed person to wear. Come on, I bet we all have at least once.
 
Left handed person here! I make my sheaths for right handed people. Typically I find that if someone is left handed they will usually ask if I can make the sheath for a left handed person so no big deal. As far as knives go, I don't think many people realize that there are "handed" knives out there but I will inform them on it before they think about purchasing one.

This one. I was so proud, then I realized I made the sheath backwards. Sigh

Kind of an interesting discussion re. Numbers. Of the population, how many are left handed. Of those, how many cook? Of those, how many know the purpose of a japanese single sided grind? Of those, how many care enough to look for/ want a custom blade? Sounds like the number is a small one…

Lol, yeah. My parents (a long time ago) used to have some sabatier non stainless knives. They had a habit of using them, then dumping them into a sink full of water, and leaving them overnight. They did not last long … a visible lesson learned for me…
 
We can expect this issue to persist now that we've stopped tying their left hand behind their back in school...
My dad experienced this, made him ambidextrous, could not tell by his writing which hand he’d use to write a particular line. By my generation they “left” us alone.
Chisel grinds for lefties is natural for me, I have to think about that right handed stuff!

I can honestly say I've never done that. I HAVE on way more occasions that I would like to admit, made a right hand sheath when the order form clearly, (as the wife/QC person points out) says left handed. I just donated three knives (and they bought another two) as prizes at a big roping this weekend. I made my Slotted sheath for all five as it truly is a universal sheath working 360 degrees on the belt. Just in case a lefty were to win one. Unlikely though as most lefty's learn to rope right handed. Roping left handed kinda gets the earth spinning off axis and is probably the true cause of climate change.
