I have case knives. My wife wants something with a thin case,
quality sharp blade, and easy to open/close. Need not be stainless.
And, I can sharpen. Will be getting waterstone set for
our kitchen j.knives.

I prefer wooden handles, rustic, smooth. Not decorative.
Chestnut japanese ones appeal...the ones
that have taper from the top and have a bulge to fit snug in the palm.
